In France, "mesclun" is a term used to describe a fresh salad made with a blend of leafy greens, usually harvested at the small and tender "baby" stage. These mesclun mixes can be as varied as your individual taste or mood dictates, but usually includes various lettuce varieties, arugula, endive, corn salad (mâche), and cress. Some of these plants are also useful as soup additives, seasonings or have been used historically for their medicinal properties.
